Most peppers turn red when ripe, but many are harvested while green, and taste just fine. Once the chilis start forming, I imagine it takes at least 6 weeks to ripen. Try one and see! Pick it, bite it. :O If it tastes bitter, it's not ready. If it tastes like a chili, seems okay to pick a few. (are these a hot variety? If so, they need to set your mouth on fire a bit, so take a tiny bite). Chilis like it hot and sunny to develop their wonderful flavor and hotness!

Thanks! I tried one of the Bolivian Rainbows and it was pretty hot, but I just checked and one turned orange, so I imagine it wasn't quite ready. The jalepeno's are FIRE!!! very good. Thanks again for the help!

Good thoughts to you, GClay. You should never apologize for lack of insight or knowledge here, instead be aware of the fact that all of us are still learning, most of all myself.

You're guidence continues on a daily basis, and I just don't know what I'd do if I didn't have access to this web site and the knowledge you and the other "experts" share with all of us. I just want to express my gratitude and humble thanks. :x

Hey, what the place is fur, right?
Sadly I cannot profess any great expertise (come to think of it - not in any particular area. Drat!) but we DO have more than a few really qualified people here. Their input is worth waiting for, I simply have the unfortunate habit of "breaking up my work day" to suit my refreshingly short attention span.
