I plant Polish linguisa tomatoes (late season tomatoes) but this year the weather really hurt me by getting so hot and not producing fruit till mid August. I have a 64 cubic foot dehydrator I made that holds nearly 100 tomatoes at one time. but the only thing that's been in it so far is 30 gals. of grapes that made 6 gals. of rasins. It's going to get too cold for the tomatoes. would it help if I planted early , mid and late seaon plants so I can start sooner?

I have a question for you, do you steam blanch your tomatoes first before you dry them? I just posted this question in the recipe section. It was atually one of your recent posts on another thread that made me think of it.

No, I just slice and dry. My drying proccess takes place in total darkness and at a low temp. aprox. 104. it takes about 3 maybe 4 days to dry but with the capasity of 100 tomatoes, it's not a problem. Next year I'm adding something to the dryer that will speed things up.
