I am just wondering if spinach can be frozen. If so, how?

Yes, spinach can be frozen...I'm not sure how... ?:| I think You would place individual leaves on a plate in one layer freeze then store...But again i am not entirely sure...

Here's a link once recommended to me that has a bunch of freezing info.
wash twice, preferably 3 times, clip off the stems. Blanch in boiling water for 2 minutes, or baby spinach for 1 1/2 minutes. Pack tightly in ziploc freezer bags, squeezing out as much air as possible. Label them with the date.
Thaw and cook as required.

I just cook mine till wilted place in ziplock bags squeeze out air and freeze.Time to cook just take out place in microwave safe dish and reheat till warm.
I didn't blanch mine when I froze it. I just washed the leaves 3X and let them dry on a towel on the counter. Then I froze some on a cookie sheet and some straight in freezer bags. Both turned out the same. They get very brittle when you freeze them this way, so it it easy to "chop" them when you are ready to use them. They just break right up.
One note on freezing, to prevent any bad chems from leaching into your food during freezing, always freeze in glass or plastic made for freezing.
