Why didn't I try this out sooner? Well, no matter. There are a couple of squash still hiding in the garage...
1 summer squash 1-2 onions 1-2 tomatoes grated white cheese fresh pesto French bread Slice the squash and put it in the bottom of a baking pan. Slice the onion and put it over the squash. Slice the tomato and put it over the onion. Bake 45 minutes at 350º. Sprinkle grated white cheese (I used monterry jack, but I hear gruyere is fabulous) over the top. Bake an additional 15 minutes. Slice French bread and spread with a little pesto. Pile squash mixture on top of bread. Be patient for just a few minutes or you will burn your mouth. Anyone want to stop by for supper tomorrow? |

I definitely wish you lived closer! This sounds like a good recipe, and I would like to try it, however, my family has threatened severe things if summer squash showed up on the table again
