I pruned and lost lots of big green tomatoes. Not a big deal since there are many left to ripen, but I don't want to waste them. I need recipes for like faux apple crisp and stuff please.

I just saw this green tomato salsa recipe and it looked good. Haven't tried it exactly, but I did something close to it last year and it was delicious!

I don't have an exact recipe, but pickling them or turning them into green tomato relish (like the ripe tomato relish but tangy instead of sweet)would be a good way to preserve them. They also make an interesting addition to slaw. If you have other firm veggies you could do a Giardinier mix as well.
