Pinto Beans Soup.....

2 cups dried pinto beans
1 TBS chili powder
2 cloves garlic, split
2 tsp. salt
1 tsp. cumin
1/2 tsp. pepper
3/4 cup rice (cooked)
1 can Ro-tel
1 cup chopped bacon which is 1 pound bacon
2 cloves garlic, minced
3 small onions, chopped
1 tsp. paprika
2 cups water

Soak beans over nite in water

Put beans in kettle with 2 quarts water. Add chili powder, 2 cloves garlic, salt, cumin, black pepper. Cook covered appproximately 3 hours.

In large pot combine beans, juice from beans,rice and ro-tel. Fry bacon, remaining garlice and onion in skillet until well done. Add with drippings and 1 cup water to beans,
cover, simmer, stirring occasionally for 1 hour. Add 1 cup water as needed for consistency.

This is good to cook in cockpot and also freezes well too
Serves 6 to 8 people
