I found this recipe in the October 2008 issue of bon appetit. One recipe makes 5 half pint jars.
I added to tuna for tuna salad and it was suggested for chicken salad also. It is yummy! 2 1/2 lbs green tomatoes, quarter inch dice 2 red onions, 1 lb total, quarter inch dice 2 red bell peppers, seeded, quarter inch dice Mix tomatoes, peppers, and onions together in a plastic or glass container and sprinkle with 1/4 cup kosher salt. Stir, cover, and allow to sit for 12 to 24 hours, stirring occasionally. Drain, rinse with cold water and let drain for 30 minutes. Using your hands, squeeze out excess liquid. Put into kettle and add: 1 1/2 tsp kosher salt 2 cups distilled white vinegar 2 garlic cloves, minced 1 1/2 cups brown sugar ( I used dark brown) 1 tsp whole coriander seed 3/4 tsp whole aniseed Bring to boil and simmer about 1 hour and 10 minutes, until most of liquid is evaporated. Stir frequently. Ladle into sterilized half pint jars and process in boiling water bath for 10 mionutes. Binny |

Thanks for posting this, binnylou! That DOES sound good. I would imagine there's a bunch of stuff that it would go well with.
