The OGM had an article on peppers and suggested freezing them. I have done it for years and want to suggest that you don't need to freeze them first on a cookie sheet. They don't stick together if you throw them into a freezer bag and freeze. Hot and bell peppers are fine this way- just like peeled bananas.

I agree that when freezing peppers whole they don't need to be frozen first on a baking sheet. I just rinse them, dry them, & toss them in a Ziploc freezer bag - stems, skins & all.
However, if one is dicing them first, then I have to say that freezing the diced pieces on a wax-paper-lined baking sheet first DOES help to keep those pieces separate & pourable down the line.

I suppose dicing them yep. How I store them is I cut them down the edges of the lobes and separate and cut out the core then I have 3-4 lobes and I throw these in freezer bags. Then I can slice or dice for a recipe. They can be cut when frozen with a sharp knife.
