Would anyone know if you could omit the grape or currant leaves from top & bottom of crock for the fermention process. Have no clue where to get them in northern WI.

Check in the Ball blue book on canning and pickling. I think the grape leaves can be replaced by allium for a crisping agent. I've never used either, but I've seen the grape leaves at Woodman's grocery stores in N. Illinois and S. Wisconsin.

It's only a weed if you can't use it!
