How do you all use your mustards? Last year I cooked them in chicken broth with ham chunks. I also added them to a white bean and ham soup. I'm looking for some new ideas. My mustards really like my soil. They grow in abundance and I even have more this year than last. Please post some ideas. Thanks!!

They work well in stir=fries as well. They can get overwhelming sometimes, but letting them mature until they're too strong to use and composting them or simply letting them lay isn't a terrible thing to do. Almost any soup or stew is improved (IMO) by adding greens, and mustard has the strength to stand up to some of the stronger soups. Have you tried pan frying them? Just a bit of olive oil, a little garlic and about 5 mins. and you're ready to eat. You can also saute or braise them with onions and peppers (bells or hots)--altho I prefer mixed greens for that---but then that's just me. My favorite way is with the ham and chicken broth, teamed with pinto beans and cornbread.

When very baby-young I use them raw in mixed-green salads. Older, I like to saute/braise them with collard & turnip greens, garlic, extra-virgin olive oil, turkey bacon, etc.
Also love to use them in Asian stirfries. They make the perfect addition to spicy Szechuan-style dishes. |
