Cymraes, I shred zuchinni and freeze it raw in two cup portions for my MIL for baking all the time. Works great.

That is what I do too. I use the food processor or stand mixer attachment so it is no work. It is already a lot of work to pick all the squash! I am going to get together my favorite bread and cake recipe for the forum. Definitely worth growing them for. And tonight I am making lemon zucchini muffins if I have time. Might be good. Nice to see more Minnesotans!

Compost is great, but you don't need to be a chemist to use it.
