Is it possible to freeze zuchinni? I was thinking of shredding some and slicing some and putting in the freezer for soups and baking. Would I just freeze it raw? Thanks!

Last year we froze some slices after blanching for 2 minutes, then cooling.

Another way we froze zuchinni and yellow squash was to make a saute with onion, galic, thinly sliced squash and chopped tomatoes. We froze this in zip-loc freezer bags placed in a square or rectangular pan, to make "stacking" easier. This was as good as freshly made.

We also dehydrated some of it. Never tried freezing raw, but seems worth a try just to see if it will work.

Your saute sounds good, so after you sauteed it, you just put it in the bags to freeze? I think I'll try that.

Thanks Daisy. I have about 5 or 6 zuchinni that I need to do something with this weekend, so I guess I'll freeze some raw and then slice and blanch some too. I'm sure when I get done there will be 5 or 6 more ready to pick!
Where in MN do you live? I grew up in SW MN.

That is what I do too. I use the food processor or stand mixer attachment so it is no work. It is already a lot of work to pick all the squash! I am going to get together my favorite bread and cake recipe for the forum. Definitely worth growing them for. And tonight I am making lemon zucchini muffins if I have time. Might be good.
