Yup, slice them any way you want and fry them like you would eggplant or zukes. Then sprinkle some parmesan cheese on top.

I also enjoy them peeled, seeded, & diced, then sauteed in some butter with some chopped fresh dill. Is a great side or topping for plain grilled or broiled fish.

Last summer, DBF had bumper crop of cukes and I ended up making...

Cucumber Soup

Sautéd the peeled, seeded and chopped cukes in butter...
Added some onion sautéd in butter...
Mixed some flour and milk together...
Added it to the hot cucumber and onion mixture, stirring and cooking til I got the desired thickness...
Seasoned with salt and some cayenne...
Used the immersion blender on it a little...
It was really good.

He had so many cukes, I ended up freezing several containers of just the sautéd cucumbers and made the soup over the winter.

I've never had cooked cucumbers, never gave a thought to frying them up either. I do like fried summer squash however... hmmmm, maybe I'll have to try this.

I remember a few years ago, Sonic, a local drive in, fast food chain here in Texas, had fried pickles on the menu...I ordered some, took one bite and fed the rest to the grackles flying around looking for french fries in the parking lot. And I dont think they ate them either. Cant say I have tried frying a raw cucumber, but if its anything like the fried pickle....Blech!!


Am I in my cabin dreaming? Or are you really scheming, to take my ship away from me? You better think about it. I just cant live without it. So please dont take my ship from me!!!

A fried cucumber is NOTHING like a fried pickle! I wouldn't eat a fried pickle either. If you like fried zucchini, you would probably like fried cukes.

Actually, fried dill pickles are a big-time southern favorite.

I've never tried them, but have a friend who is addicted. They pop up once in awhile on VA menus. They're served either whole or in chunks, along with a dipping sauce. they were also recently featured on one of Andrew Zimmern's "Bizarre Foods" episodes on The Travel Channel - I believe the one where he toured the deep south.

To be honest, I rather think I'd prefer a fried pickle to a plain fried cucumber, but to each his own. . . .

In the south we have a bad habit of battering and frying anything. The most disgusting thing I've heard of was deep fried Twinkies! I've had stir fried cucumbers at Chinese resteraunts before and liked them.

Lol!! Anthony Bourdain had deep-fried Twinkies (along with deep-fried Oreos) on one his shows ("No Reservations" on The Travel Channel). He called them "Twinklicious" - lol!

Not being into sweets, I'd much prefer the pickles!

A restaurant nearby had fried pickles on their menu. I actually liked them and my understanding is that they were a big hit with their customers. I did notice that they were on some of the menus in New Orleans when I was down there for a visit recently. DH doesn't care for them though and I wasn't up to eating a portion of them alone.
