This soup was the best soup I ever made. It was adapted from the newspaper and I don't have good amounts. But we both loved it- even though it is so simple!

butter cooking spray in med-large pot
1 large yellow onion, chopped, cooked on medium with 1T butter or margarine til transulent.
add 1 garlic clove chopped and cook another minute
add about 3c vegetable broth (I used 3/4 of a container)
let this boil for 5 minutes (turn up heat)
add a medium zucchini with skin, chopped, and a good pinch of salt and some pepper (about a 10 inch long zuc- not real big)
cook 5 minutes
add 1/2 can or a little more lite coconut milk and 2 sprigs of chopped mint (do not leave out mint!)
cook another few minutes to thicken, then puree with a hand blender or carefully put into a blender. Blend well.
I will serve this for company inside a hollowed out eight ball zuc or patty pan squash.

Company loved it! I hollowed out 2 large patty pan and 2 eight ball zucs with a grapefruit spoon and rubbed lemon juice on them to keep fresh. Then I ladeled the hot soup in and put the tops back on. It was so cute.


No longer a market virgin; looking forward to year two of being a professional grower.

That sounds amazing! I just might have to make it tonight!!! YUM! Zucchini AND coconut milk... what could be better than THAT???

Do you just pitch out the patty pan squash after? It's probably a stupid question, but I've been dying to ask it.

I suppose I would just put the squash in the compost. Seems like a waste though.

Yep I threw them out. I used older patty pan and two large eight ball and had no use for them otherwise.
