We're getting overwhelmed with cukes so I needed a way to use a lot of them up. This was so good, I can't wait to make it again:
2 large cucumbers, peeled, seeded & cut into chunks 2 ripe avocados 1/2 cup fresh cilantro 1 jalapeno, seeded & diced fine (adjust to your taste – I just used 1/2 a pepper but it could stand a whole one) 4 scallions, chopped Juice and zest of one lime Sea salt and white pepper to taste
Put all ingredients into food processor (or process in batches in a blender). Puree until smooth, adding cold water to thin as necessary (you want a soup, not a paste). Chill at least an hour. Ladle into shallow bowls, garnish w/ sprig of fresh cilantro, avocado slices or boiled/steamed shrimp. You can also add an ice cube or two prior to serving.
Variations: substitute lemon & fresh dill for the lime/cilantro/jalapeno. Or garlic and parsley.
