Just found this on backwoodscooking.com, sounds yummy...
ZUCCHINI PIZZA CRUST Ingredients: 3 cups shredded zucchini (if frozen, thaw completely; discard the excess liquid) 2 eggs, beaten 1/2 cup grated mozzarella cheese 1/2 cup grated cheddar cheese Directions: Preheat the oven to 400°. Squeeze and drain any juice from the zucchini. Mix the eggs, zucchini, and cheeses together in a large bowl. Press out the mixture on a greased 12-inch pizza pan. Bake the crust at 400° for 10 minutes. Add your favorite pizza toppings and sauce and bake the pizza for 10 minutes. Serves: 6 Inch by inch, row by row, gonna make this garden grow... Hey everyone. I'm new here.
Wow, never would have thought of a zucchini pizza crust. I often make my own crust and pizzas anyway. This is a good addition. Thanks |

Sounds good...totally different...I have some summer (yellow) squash shredded up in the freezer. Wonder if that would work too?
