And burnt out. Help me think of good meals once again!

Please remind me of all those fall dishes we love. Contribute a great muffin, scone or biscuit recipe.

I think my mouth is bored.

Can't help you in the bread department since I'm not much of a baker & we don't eat a lot of bread in general.

But this time of year does find me making more chili - made Turkey chili last night with all the toppings - as well as braises (my own version of "Chicken Hungarian Goulash" last Tuesday in honor of Bela Lugosi's birthday - lol!!) & Coq au Vin, Chicken Marengo, etc. All items that are a bit too hearty for the summer months. I also have wild goose parts in the freezer that I was gifted with that are waiting to become a red-wine stew in my crockpot fairly soon. Also made my own version of "Cod Basque Style" a few nights ago - basically nice thick Cod filets braised in a thick tomato/onion/bell pepper sauce to make a sort of seafood stew. Delicious!

Tonight, however, since our local market had some really nice fresh flounder filets on sale, I'm making "Flounder Stuffed With Crabmeat". It's actually not "stuffed", rather I put one filet in the bottom of individual-size oval gratin dishes, add a layer of crabmeat "stuffing" (fresh blue-claw crabmeat, sauteed mushrooms, shallots, garlic, parsley, shredded Italian cheese mix, etc., etc.), then top with another flounder filet, breadcrumbs & more cheese. Bake for about 30 minutes in a 375-degree oven & serve with a nice big green salad.

Gee, can you tell that cooking is my "thing"? Lol!!

I'm not much of a baker either, but just made this the other night and it was really good:

Home grown fall garden soup:

1 large butternut squash
2 med. parsnips
1 med. leek
1 bunch chopped parsley
2 TBS chopped sage
2 TBS butter
1 qt chicken or veg broth
1/2 cup half/half or cream

Saute leek in butter 5 min. Add chopped veggies, herbs, salt & pepper and chicken broth. Bring to a low boil, then cover and simmer for 1/2 hour or until vegetables are soft. Puree in food processor or blender until smooth. Add back to pot along w/ cream and heat while stirring for two minutes. Ladle into shallow bowls and garnish as you like – I topped each off with a nice bit of herbed goat cheese. Let it melt a bit, then serve. Great hearty, fall soup.

Breezy – how does one get an invite to your table? Sounds like some wonderful things comin' outta that kitchen!

ANGEL BISCUITS
Angel Biscuits are great with honey butter or strawberry butter! This is one of those times you use yeast but do not have to fuss with letting it rise!

Preheat oven to 450 degrees

2 pkg. dry yeast disolved in 1/4 cup warm water (5 minutes)

5 cups all purpose flour (gold medal)
1 Tablespoon baking powder
1 teaspoon soda
2 1/2 Tablespoons sugar
1 teaspoon salt
2 sticks (1/2 lb.) real butter
2 cups buttermilk

Sift dry ingredients together. Cut butter into flour mixture with a pastry cutter or fork until pea size.

Stir in yeast mixture and buttermilk
Mix well.
Knead until smooth on floured board
Roll to 1/2 thick
Cut with biscuit cutter or a glass.
Place 1 inch apart on greased cookie sheet.
Brush tops with melted butter.
Bake until pale golden
Reduce heat after putting in oven

HONEY BUTTER
With a wire whisk, beat some honey into very soft butter. Put in a decorative container and refrigerate. Let set out for awhile when ready to serve....you want it soft.

STRAWBERRY BUTTER
With a wire whisk, blend some strawberry preserves into very soft butter. Put in a decorative container and refrigerate. Let set out for awhile before serving, it needs to be soft.
