Topofthehill,

You probably don't get nervous when you have to make a cake for someone.
I find baking very nerve racking...I must get 'stage fright'...seems the darn stuff never comes out of the oven the same way twice...and it is never right when I have company coming :_|

BTW, I made the ginger, sugar, and lemon juice mix and have it in the freezer! Yummy little additive for all sorts of concoctions.

:^O No, the only time I had "stage fright" over baking was last summer when I did DD's wedding cake. I was all stressed out with the other wedding details and the cake was one more thing to stress about.

But, alls well that ends well. Everyone loved her cake and I've gotten several other jobs from that.

Glad you like the ginger mix. The only way I'll make ginger snaps anymore is if I have fresh ginger. Hmmmmm- now I'm getting hungry!

Here's what I have done in the past. Spray an empty ice cube tray with some nonstick spray (Pam). Then put one egg yolk in each cube area & freeze. When frozen, dump into a freezer bag. When you need an egg yolk, you can pop one in the fridge to thaw out. Works like a charm. Smiler
