Made 14 pints of pickle relish yesterday and today, in 1/2 pint jars. That will be plenty to last 2 years!

Cuke crop is way over expectations. I don't like making pickles, the guys won't eat them. They will only eat the store bought dills. They will eat the relish.

So, guess there will be a lot of cukes for the compost pile!

I made Zucchini relish with the abundance of Zukes I had before the SVBs hit (28 half-pint jars). My wife loves it so much she doesn't want to try the regular/cuke relish. Fortunately my kids like the Bread and Butter pickles I make so I’ll make a ton of them again. I haven’t found a good canning Dill pickle recipe yet (they all seem to be to taste too salty to me).
