I planted some tomaotes this year that really su_k. So The only thing I can think to do with them is make a soup. The are the German Red Strawberry. I hate the texture, spongy mush inside. Anyone have a good recipe? I'm thinking simple a little chicken stock, a bit of heavy cream, s&p, garlic and basil. Maybe some home-made croutons on top.
Your tomato bisque idea sounds dee-lish...how 'bout adding a shallot or two?
Right now, in my area, Chanterelle mushrooms are in season and I make a similar bisque using chicken stock, cream, celery, S&P, shallots and a pinch of basil & thyme. After pureeing(?) I poach some oysters in the simmering bisque for about 3-5 mins. & serve with a crusty baggette. Wifey & daughter (& me too) love this bisque.
