I did something I haven't done in a long long time, I canned peaches in pint jars again. Years ago I found this poem, when I was starting the quart jars, never did the half gallon jars, but often used two quart jars;-)
When Jane and I were married first, She did as most brides do: Put up fruit in jars Which hold about enough for two.
But with the years the babies came, And Jane said that she found She’d have to have quart jars To have enough to go round.
Their bodies grew so big and strong, Likewise their appetite; I said to Jane, I’ll get some more Half gallon jars tonight.
Then gradually they went away To build homes of their own. Jane hunted up the old pint jars Again we were alone.
But every year she fills a few Big jars to stand away For all the youngsters when they come home To spend a holiday. Virginia Strouth, Ashton Iowa

Organic Baby- for years I thought that I had to have bushels in order to can. Actually, give it a whirl with a small amount. Even if you put up only four or five pints, save them for Thanksgiving, or January.... your family will smile at that taste of summer.
There is a wonderful feeling of a shelf full of home canning, but starting out small is not a bad thing. This is the time that you can get fresh peaches at farmers market. If you buy a bit more than can be eaten, put it up a bit in a jar in a hot water bath. You are looking at about an hours worth of work, maybe a bit more.
