This one is accidental also. It started out to be Wild Rice & Chicken, and it still was but I added stuff to it:
4 chicken breasts, cooked and diced 2 cans chicken broth (or the broth from cooking the chicken chopped cauliflower and broccoli chopped onions chopped carrots garlic 2 cans cream of chicken soup 1 can cream of celery soup salt & pepper Cook all that til veggies are tender. Add 2 cups brown rice, the 10 minute kind, simmer til rice is done. You might have to add liquid at this point if it's too thick. Then add 1 can evaporated milk and simmer til steamy. Then add Velveeta cheese, however much you want. If it's too thick add water or plain ol' milk. I'm thinking some bacon in there wouldn't be so bad either! DS loves this one, so I pack up leftovers and freeze them for him.
