MAN I envy you guys! I wish my basil would be so prolific!!! My plants are still struggling to grow in my kitchen. I wish I could get some new starts, but there's none to be found. I did add some seed to the pot, so hopefully they'll sprout up soon. I can't imagine having too much basil!! You are all so lucky!!

Almost any herb is better fresh than dried, but drying it naturally, without power, leaves it at LEAST as pungent as the stuff you buy in jars. I haven't had good luck using a dehydrator or drying it in an oven (residual heat)with the door open and it still having flavor.
It would probably keep better in a paper bag rather than in a plastic bag for taking it to work etc. since it would let the moisture escape slowly instead of trapping it or letting the herbs dry out too quickly.
Pesto and frozen do leave the fresh taste, but I don't rule out dried.


If you don't have wrinkles around your eyes, you haven't smiled enough.
