I have been looking at the Pinetree Catalog, and wondering what kind of spinach to order. This is a new vegetable for me. Any suggestions for Zone 7?

Whatever type you like is fine! Keep in mind that all spinach loves cool weather, rich composted soil, a high pH (7.5), lots of calcium, and lots of nitrogen.
I plant my spinach seeds on top of small sheets of toilet paper and a light sprinkle on top of mature compost or rich dirt. Then I weekly soak the seeds with an aerobic compost rich in fish scraps and seaweed and molasses. Commercial fish emulsion will also work.
The toilet paper idea was recommended in an old OG magazine. It helps the stubborn spinach seeds germinate better and the nutrients to hold to the seeds better.
Seing as how you are in a fairly warm climate, and spinach gets bitter and bolts in hot weather, you might want to try Malabar spinach. It climbs, so makes a nice ornamental screen, and stays tender and sweet even in hot dry weather.
