Most potatoes are treated with a sprouting inhibitor, which I'm guessing you could wash off. If the potatoes aren't certified as disease free, you might be introducing some disease into your soil that will mess it up for future potato planting. That's why the seed catalog potatoes cost more.Potatoes sold for eating can carry disease (ever cut a potato in half to find a rotten spot inside?).

Just leave them in a dark, warm place and they will sprout. Paper bag is good, next to the oven, or even a warm cupboard. I just got my Yukon Gold seed potatoes, fairly inexpensive. I get the tiniest ones so I don't have to cut them up, just plop a whole potato in the hill.

Were the ones you got sold as "seed" potatoes?
