I bought a 5 pound bag of garlic and unfortunatly I noticed that alot of them were sprouting.Having tried saving them in vinegar or oil and not finding it to my liking (the taste of vinegar and oil seemed to permeate the clove)I tried something new.After peeling all the bulbs I put them in a blender with enough water to be able to pour them into ice cube trays.After the initial freeze I took them out and put them all in freezer bags(double).I'm sure any herb would work as well(perhaps not pureed though). Works Great. I intend to try some old onions (like that happens often) to save for soups and dips ect. Will let you know how it works.
I tried this (not the puree part) with dill and loved being able to have a taste of summer in the winter. I was going to try it with basil but didn't catch my plants in time before the first freeze. I'd be interested to know which herbs you try this season and how it works. Good luck!
Never tried that on allium, should work! I do like to make herbal icecubes with fresh pasley, mint and tarragon. Nothing like it on baked potatoes in winter!
Am I missing something? I don't know about garlic (I roast whatever seems tired and it lasts a lot longer), but I just wash & thoroughly dry herbs, shred in the food processor & freeze without the water.
I hadn't mixed the oil and vinegar,I tried them seperatly.All of my herbs are normally dried from medicinal to culinary.Usally I would plant my sprouting garlic but my ground is still frozen.In most meals I use any where from 2-10 cloves of garlic.There is nothing worse then running out,that's why I tried this trick.Man,do I ever miss summer when you have everything fresh.
