By far, my favorite winter squash is "Sweet Dumpling". Tastes sweet and mellow. Bears an abundance of squash, and stores well. Easy to cook! And it looks pretty too! What are your favorite winter squashes? Jane
I have to confess ,I 'bombed' on the sweet dumpling one year and never tried it again.(Have limited space and can't afford to experiment) My favorite is Burgess Buttercup...even my 94 year old mother likes it . It might be too dry for some folks,I just add a little more H20 and whip it up.

Well the most versatile in my climate seems to be Waltham Butternut, the stems on it and others of the moschata family are solid and resist vine borers and the other pests in the area. Just plant it mulch it and forget it till harvest. They store the longest also. A relative is japanese pumpkin or Tetsuko(sic?) that I got from Pinetree Seeds, round, green and ridged outside, orange inside and 5 lbs. That was great also and it the vines weren't so huge it would be my favorite instead.
It depends upon what I'm going to do with the squash. My favorites for flavor are Waltham Butternut and Buttercups. My wife likes Acorns baked with Vermont maple syrup and walnuts.
I like many winter squashes. butternut and burgess buttercup are my two favorites though. Banana squash is great too-like a really big (can be over 4' long) delicata but with a pink skin
I love butternut squash. De-frickin-licious. Now that the wife and I are on our way to low-carb, we eat a lot of spaghetti squash. We make a pseudo lasagna thing that's really good. A co-worker of mine grew a ton (not literally!) of them. His being sick of them is my good fortune.
Waltham butternut. It's the only one that likes my garden. It bears heavily, and is so delicious, and DH likes the fact that you don't need to put butter on it.
After reading about all of these favorites, I have to wonder if anyone has tried mine? I love the flavor and earliness of Golden Delicious, and it is big enough to feed a family of 5 in one sitting. The seed is from Baker Creek Heirloom Seeds, and since my first time growing it, it will always have a place in my garden. And how about the little Gold Nugget squashes? Taste like candy, take a little longer than some winter squashes to mature, but keep longer, too. And they grow in a nice, tidy little bush! Get them from Vesey's or from Territorial Seeds. Another favorite I get from Pinetree Seeds is Golden Hubbard. Rich and custardy-very nice. Also one of the earliest to mature. I also want to mention the merits of Jung's Mooregold squash. It makes a great pie, the seeds are terrific roasted, and hey! It matures here each year, too!! I love winter squash and try each one, but I kind of have to go with the ones that have a fruitful (loaded vines) kind of quality that can make it here where frost hits in July, and that has unsurpassable cooking qualities. Thank goodness for good squash!!!
I have to cast one more vote here for buttercup. My SIL swears by the dumpling ones and gave me some seed one year. Unfortunately we had a June 1 snow and the dumpling squash bit the dust and the buttercup went on to produce that year and I've never had a chance to try(dumpling) them since.

I would have to say that Acorn and Butternut are my favorite squash. I have grown them, stored them and they kept well into late winter. I am not sure if the butternut was Waltham, but will look this year for those. I like a good nutty flavor in my squash, does the Waltham have that??
